Why the tea changes colour
The blue colour comes from butterfly pea, Clitoria ternatea. Its petals contain natural pigments called anthocyanins. When you add lemon, the acidity of the drink changes, the pigments rearrange, and the colour shifts from blue to purple.
It isn't a trick, just plant chemistry: red cabbage does the same. That is why coffee shops love PurpleBlue: guests film the colour change.
